Cucumber Lentil Niramish
(Shosha Dal Niramish)

Vegetable recipes are every much popular all over the world. The Cucumber Lentil Niramish is a tasty Bengali style vegetable curry which is seasoned with Panch Phoran and stew alongside lentil patties. Serve it alongside hot steamed rice and an aloo parwal sabzi for a healthy lunch or supper.

Ingredients:
1 medium sized cucumber,
1 cup red lentils,
¼ teaspoon ground ginger,
½ teaspoon ground coriander,
2 green chillies, pared,
1 tablespoon sliced onion,
1 tablespoon cooking oil,
Salt to taste.
Cooking Process:
·         Peel, wash and cut the cucumber into cubes. Rinse the lentils and drain water. In a saucepan, place all the ingredients except the onion, chillies and oil.
·         Add 3 – 4 cups of water cover and simmer till lentils and cucumber are cooked. Add green chillies and bring to a boil.
·         Heat the oil, fry the onion brown and pour in the lentils. Remove from heat.
Serve heat with fluffy boiled rice or chapatti. 6 - 8 servings.
